Cranapple Roasted Turkey Breast

Roasted turkey, basted with apple brandy and served with delicious cran-apple stuffing, perfect for a small holiday get to together.

Ingredients

  • 1 onion, chopped
  • 2 ribs celery with leaves, chopped
  • 1 green apple, cored and chopped
  • 6 tablespoons butter
  • 1 cup chopped fresh cranberries
  • 1 cup turkey or chicken broth
  • 5 slices rye bread, torn into small pieces
  • 1 egg, lightly beaten
  • Salt and pepper to taste
  • 1 turkey breast, bone in (about 3 pounds)
  • 1/4 cup apple brandy

Directions

Sauté onion, celery and apple in 4 tablespoons of butter until tender-crisp, about 3 minutes. Add cranberries, broth, bread pieces, egg, salt and pepper. Mix gently; mound on greased baking sheet.

Place turkey breast, skin side up, over dressing. Melt remaining 2 tablespoons butter with apple brandy. Baste turkey breast with butter mixture.

Roast in preheated 350 degree oven, basting occasionally, until an internal temperature of 170 degrees, about 1 hour and 15 minutes.
