Turkey Sausage Calzone

This is a great use for turkey sausage. Combined with the peppers, mushrooms and cheese, this is a delicious, Italian inspired meal.

Frying pan

·     ½ pound mild turkey sausage

·     2 teaspoons olive oil

·     ½ cup chopped red bell pepper

·     ½ cup sliced fresh mushrooms

·     ¼ minced garlic

·     ½ teaspoon dried Italian seasoning

·     1/8 teaspoon crushed red pepper flakes

·     1 pizza dough (homemade or store bought)

·     1/3 cup pizza sauce (plus more for serving)

·     1 ½ cup shredded cheese (4 cheese blend or yourfavorite)

·     1 egg, slightly beaten

Directions

1.    Preheat oven to 400°Fand lightly spray a baking sheet with non-stick spray

2.    In a pan, cook turkey sausage over medium-highheat until fully cooked and no pink remains. Remove sausage from pan and set aside.

3.    In the same pan, heat the oil over medium-highheat. Add the chopped peppers, sliced mushrooms, and garlic. Cook about 5minutes, until tender, stirring frequently.

4.    Add the pepers, mushrooms and garlic to thesausage. Mix in Italian seasoning and red pepper flakes.

5.    Roll pizza dough into roughly 14x10-inch rectangleand cut into 4 (7x5-inch) rectangles.

6.    Place 1 heaping tablespoon of pizza sauce ontoeach rectangle, spreading to within ½ inch of the edges. Devide the sausagemixture between the four rectangles and add the cheese, leaving ½ inch of dougharound each side.

7.    Fold the dough in half diagonally and press theedges together with a fork to seal. Brush each calzone with the egg.

8.    Bake for 20-25 minutes, until golden brown.

9.    Serve with warmed pizza sauce for dipping.
