Turkey Pumpkin Chili

Ingredients

Large Skillet

·     1 Tblsp vegetable oil

·     1 cup chopped onion

·     ½ cup chopped green bell pepper

·     ½ cup chopped yellow bell pepper

·     1 small jalapeño,chopped

·     2 garlic cloves, minced

·     1 pound ground turkey

·     1 (14.5 ounce) can diced tomatoes

·     2 cups pumpkin puree

·     1 ½ Tblsp chili powder or more to taste

·     ½ tsp ground black pepper

·     ¼ tsp cayenne pepper

·     1 can (15 ounce) red kidney beans, rinsed and drained

·     Salt to taste

·     Shredded cheese of your choice

·     Sour cream

Directions

1.    Heat oil in large skillet over medium heat. Addonion, green bell pepper, yellow bell pepper, jalapeñopepper, and garlic. Cook and stir until tender.

2.    Stir in turkey and cook until evenly brown,drain.

3.    Mix in tomatoes and pumpkin. Stir in chilipowder, black pepper, cayenne pepper and salt to taste.

4.    Reduce heat and simmer 10-15 minutes.

5.    Add kidney beans and simmer another 5 minutes,until beans are hot.

6.    Serve topped with shredded cheese and sourcream.
